Rhubarb Crumble

I tried this recipe out today, and I have to say it tastes soooo good! I can't stop eating it!
And oh my...It smelled so nice while it was baking in the oven...The whole house smelled like rhubarb!
Totally in love! ♥

The sweet/sour taste of the rhubarb and the crumble is really amazing!

This is my recipe!

Ingredients:

For the rhubarb compote:

♥ 300-500 gr rhubarb

♥ 25 gr sugar (or more, if you'd like the rhubarb compote to be sweeter)

For the crumble:

♥ 200 gr flour

♥ 220 gr butter

♥ 100 gr sugar  (or more, if you'd like the crumble to be sweeter)

How to:

Step 1. Making the rhubarb compote

Start by peeling the rhubarb. It's very easy and can be done by hand. Just take the husk at the top of the rhubarb stem and pull downwards.
Then cut the rhubarb stems in little slices. Make sure the slices are quite thin, otherwise they won't be cooked properly.
Put the rhubarb slices together with the sugar in a saucepan and add water, until it reaches the top of the rhubarb slices.
Let it slowly cook.

Step 2. Making the crumble

Put all the ingredients in a bowl and mix with your hands, until the dough gets crumbly. If your crumble is too dry, add a little water and mix again.

Step 3. Putting it all together

Pour the rhubarb compote in a backing dish (first grease with butter). Put the crumble on top of it and press lightly with your fingers.

Bake at least 30 minutes (170 C.) or until the crumble is getting goldbrown. Serve cold or warm with some whipped cream!

For a variation: put 300 gr of strawberries with the rhubarb before cooking (step 1.)
